Vegan lemon cake

Ingredients (9)
- 1 pc of lemon
- 450 ml of vegan yoghurt
- 240 g of flour
- 50 ml of maple syrup
- 150 ml of plant milk
- 130 ml of olive oil, extra virgin
- 2 tsp of baking powder
- 0.50 tsp of baking soda
- 1 Tbsp of rosemary, finely chopped
- Preheat the oven to 175°C
- Put the dry ingredients into a large bowl, and mix well
- Put the wet ingredients to another bowl and mix well
- Pour the wet ingredients into the dry ingredient bowl, and mix until just combined
- Pour the batter into a pan lined with baking paper, and bake for 40 minutes
- Let the cake cool before cutting it
Tip
You can eat it as it is, or cover with the frosting of your choice, and decorate with rosemary, lemon slices and berries!
