- 100 ml of tahini
- 50 ml of preserved lemon juice

Preserved lemons are lemons marinated in salt and their own juice for a few weeks or a few months. You can buy them ready-made or make your own,
- Put the tahini and the preserved lemon juice in a blender, and blend until smooth and fluffy.
- If it's too thick for your taste, thin out with cold water or more preserved lemon juice, depending how sour you'd like the end result to be.
Tip
If you don't have preserved lemon juice, you can use fresh lemon juice and a little salt for a similar taste.
