Red velvet cake

Ingredients (11)

  • 240 g of beetroot, raw
  • 2.50 g of baking soda
  • 1 tsp of lemon
  • 450 ml of buttermilk
  • 45 g of coca powder, unsweetened
  • 240 g of flour
  • 375 g of powdered sugar
  • 6 g of baking powder
  • 4 pc of eggs
  • 172.50 g of butter
  • 7.50 ml of vanilla extract
  1. Wash the beetroot, trim the ends off, and dry it.
  2. Lightly oil the outside, and put in in an oven-proof dish with a lid.
  3. Bake at 200 °C for an hour, then let it cool.
  4. When ready to make the cake, preheat the oven o 175°C.
  5. Peel the beetroot, discard the skin, and put it into a food processor with the buttermilk and the juice of the lemon, and blend until smooth.
  6. Mix the dry ingredients until well combined.
  7. Beat the butter with the eggs until pale and fluffy, then add the vanilla extract.
  8. Alternately add the dry ingredients and beetroot mix to the butter mixture, scraping the bowl in between.
  9. Pour the batter into a grease or lined baking form, and bake for cca. 20 minutes.
  10. Once cooled, you can serve it as it is, or decorate it with your favorite buttercream.
