Ingredients (11)
- 240 g of beetroot, raw
- 2.50 g of baking soda
- 1 tsp of lemon
- 450 ml of buttermilk
- 45 g of coca powder, unsweetened
- 240 g of flour
- 375 g of powdered sugar
- 6 g of baking powder
- 4 pc of eggs
- 172.50 g of butter
- 7.50 ml of vanilla extract
- Wash the beetroot, trim the ends off, and dry it.
- Lightly oil the outside, and put in in an oven-proof dish with a lid.
- Bake at 200 °C for an hour, then let it cool.
- When ready to make the cake, preheat the oven o 175°C.
- Peel the beetroot, discard the skin, and put it into a food processor with the buttermilk and the juice of the lemon, and blend until smooth.
- Mix the dry ingredients until well combined.
- Beat the butter with the eggs until pale and fluffy, then add the vanilla extract.
- Alternately add the dry ingredients and beetroot mix to the butter mixture, scraping the bowl in between.
- Pour the batter into a grease or lined baking form, and bake for cca. 20 minutes.
- Once cooled, you can serve it as it is, or decorate it with your favorite buttercream.
