Ingredients (4)
- 200 ml of mayo, vegan optional
- 400 g of beetroot, raw
- 1 tsp of horseradish, shredded
- 2 Tbsp of neutral oil
- Wash the beetroot, trim the ends off, and dry it.
- Lightly oil the outside, and put in in an oven-proof dish with a lid.
- Bake at 200 °C for an hour, then let it cool.
- Peel the beetroot, discard the skin, and put it into a food processor.
- Add the mayo and horseradish, and blend until smooth.
