Beetroot-horseradish dip

Ingredients (4)

  • 200 ml of mayo, vegan optional
  • 400 g of beetroot, raw
  • 1 tsp of horseradish, shredded
  • 2 Tbsp of neutral oil
  1. Wash the beetroot, trim the ends off, and dry it.
  2. Lightly oil the outside, and put in in an oven-proof dish with a lid.
  3. Bake at 200 °C for an hour, then let it cool.
  4. Peel the beetroot, discard the skin, and put it into a food processor.
  5. Add the mayo and horseradish, and blend until smooth.
